Kodiak Crepes

During the week we're all about a quick and easy breakfasts, as we've gotta get kids ready and get out the door, but every Sunday Aaron cooks breakfast and I loooove it. It's something we look forward to all week!

As some of you may know, both Aaron and I are currently macro tracking with a goal of fat loss. While we both ate healthy throughout my pregnancy, but I preferred to eat intuitively to make sure I was getting what it needed rather than tracking. Aaron and I do better sticking to macro targets when we're both tracking so he took a break with me. Needless to say, we were both feeling a little soft!

With lower macro targets we dropped our usual protein pancake recipe and created something a bit lighter that doesn't have quite as strong of a hit on our macro allowances...protein crepes! To be totally honest they're kind of in between crepe/pancake but either way, they're delicious.

I use Kodiak Cakes flapjack mix in this recipe so make sure you have it! It provides added protein and makes the whole thing. If you haven't tried Kodiak Cakes yet, you need to get on it!

Ingredients (makes ~6 crepes):


In a small bowl, mix Kodiak Cakes flapjack mix and nutmeg. In a large bowl, mix milk, eggs, egg whites, melted butter, and vanilla. Combine and mix until smooth. 

Heat pan to medium heat and pour 1/2 cup of mix, cook for ~1 min on each side.

Macros for 1 cooked crepe (93g):

10g Protein

10g Carbs

8g Fat

My favorite way to eat these is with fresh strawberries and whipped cream, but they're also great with:

Kodiak Cakes fruit syrup + whipped cream

Powdered sugar + lemon

Fresh fruit of all kinds

Maple syrup (I suggest adding 1/2 tsp of cinnamon to the mix if you go this route, so good!)
