Open-face Chicken Salad Sandwich
Summer calls for light and fresh lunches. I've been eating this on repeat for 3 weeks now! It's so easy and fast and packs a protein punch! It can be a bit messy but I promise it's soooo good!
Chicken Salad Ingredients (makes 2 servings):
7 oz. canned chicken
2 Tbsp mayonnaise
20 red grapes
1 chopped celery stalk
1 tsp cilantro
2 Tbsp diced red onion
Mix the chicken salad ingredients well. Serve half of the mixture on thin sliced toast (I like to use Dave’s killer powerseed bread) with spring greens and cheese.
