Baked lemon chicken

As I'm sure you have been told a million times, chicken breast is an awesome source of lean protein, and if you're counting macros or eating healthy it's kind of a staple but OMG it can be the worst! There are few things I dread more than a dry, tasteless, tupperware of chicken and veggies for lunch. So...I've made it my mission to find a few healthy recipes that I can put on repeat and actually enjoy eating. 


This is one of my go-to recipes for weekly meal prep. Each Sunday I prep enough chicken to get the mister and I through 5 days we're at work. I'm quite time poor in general and do not believe that meal prep should take all day, so I love that this recipe is quick and I can easily adjust it for the number of meals I'm planning to make.


Let's do this. Here's what you'll need for 4 servings:

2 Tbsp olive oil

1 Tbsp butter

4 thawed chicken breasts

1/3 cup chicken broth

1 tbsp agave

2 tsp minced garlic

1 tsp fresh basil

1 tsp fresh parsley

1 tsp fresh rosemary

1 tsp dried oregano

1 tsp dried thyme

1 tsp salt

2 whole lemons


Note: You can go dried or fresh on any of these herbs, I usually always have fresh parsley, basil, and rosemary on hand because they taste amazing fresh. I'm not sure how well it will turn out with all dried herbs but I've substituted here and there when I run out and it's hasn't turned out too bad.



-Pre-heat the oven to 400 degrees F

-Add olive oil and butter to a large skillet over med-high heat. Add all 4 breasts and cook each side until browned ~3 min per side. Then transfer to a glass baking pan.

-In a small mixing bowl whisk together chicken browth, agave, garlic, herbs, salt, and juice from 1 lemon.

-Slice the remaining lemon into thin slices.

-Pour mixture over the chicken. Add a lemon, or two, on top of each piece. 

-Bake chicken for 20-30 minutes (depending on size and thickness)

-Spoon sauce mixture over chicken every 10 min or so to keep it moist. 

-Enjoy now or tupperware up for the week!

Note: Keep the remaining sauce and pour over veggies, brown rice, or mashed potatoes if you want some delicious sides with your meals as well! So good!
